Abstract

Hilirisasi PIGELA Chips memerlukan pasokan pisang kepok yang andal, sedangkan produksi petani di Bojonegoro tersebar, transaksi belum konsisten berbasis kilogram, kriteria mutu bervariasi, dan catatan panen belum terkonsolidasi. Kegiatan pengabdian ini bertujuan memperkuat tata kelola pasokan hulu melalui pemetaan pemasok berbasis data dan rancangan operasional yang menghubungkan petani, titik pengumpulan, grading, dan CV Haza Food Indonesia. Kegiatan dilaksanakan di Desa Gedongarum dan Desa Temu pada Mei-Juni 2026 melalui sensus petani, telaah basis data, wawancara terstruktur, observasi kebun, pemeriksaan mutu, serta validasi partisipatif. Kegiatan menghasilkan basis data 165 petani dan 3.132 pohon di Gedongarum, termasuk 2.192 pohon produktif. Estimasi produksi mencapai 30.688 kg per siklus; 92% memenuhi Grade A atau B, sedangkan 15.958 kg per siklus tersedia untuk pengembangan kanal industri setelah memperhitungkan konsumsi rumah tangga dan pasar eksisting. Konfirmasi pada lima petani konfirmasi terbuka terhadap pendampingan dan kemitraan. Luaran manajerial meliputi segmentasi supplier, kalender panen mingguan, pencatatan mutu dan harga, ketertelusuran, serta indikator kinerja volume, waktu, mutu, dan kelengkapan data. Hasil menunjukkan bahwa kesiapan hilirisasi tidak hanya ditentukan kapasitas produksi, tetapi juga tata kelola pasokan yang terkoordinasi, terukur, dan akuntabel bagi para pihak.
